If Korean cuisine is a lyric poem, then Hanjeongsik is undoubtedly its most radiant sonnet. Wouldn’t you be intrigued by a dining experience that unfolds like a gastronomic ballet, each course a meticulously coordinated dance that plays out on your palate? Well, that’s Hanjeongsik for you – a symphony of flavors that strings together a multitude of dishes into a vibrant spectacle of culinary artistry. Be prepared to kick-off your gastronomic journey in Korea with a dining tradition that is as immersive as it is mouthwatering.

What is Hanjeongsik?

Simply put, Hanjeongsik is a grand meal that encapsulates the spirit of the Korean royal court cuisine from the Joseon Dynasty. Hanjeongsik is not the name of one dish, but a style of eating a variety of Korean foods as a course meal. This full-course meal is a dynamic blend of multiple dishes, each appealing to different senses through varied colors, textures, and flavors.

Begun with ‘banchan’, a series of appetizing small dishes that range from fermented vegetables like kimchi, tofu delicacies, pancakes, to various soups and salads. This kickoff is meant to wake up your palate, introducing you to a wide variety of tastes from sweet and sour to spicy and savory.

This appetizer parade is then followed by the main course which isn’t standardized and can dramatically vary depending on the restaurant or the geographical region. Some possibilities include mouth-watering grilled fish, hearty meat stews, or beautifully presented seasonal veggies.

Capping off the meal is typically a cooling drink such as Sujeonggwa, a sweet Persimmon Punch, or Sikhye, a sugary rice beverage, to bring a delightful conclusion to the diverse feast.

So, if you’re planning a visit to Korea or simply in love with exploring different cuisines, put Hanjeongsik at the top of your must-try list. In a survey of foreign tourists in Korea, Hanjeongsik was ranked as one of the top 10 most memorable Korean foods. It’s true representation of Korean culinary heritage and an opportunity to experience a meal that was regularly enjoyed by the royals. You won’t regret it!

What is the history of Hanjeongsik?

The exact history of Hanjeongsik is unknown. It is believed to have been created in the late 1800s to early 1900s. During the Empire of Korea, a high-end restaurant began using the word ‘Hanjeongsik’ when it began selling Joseon royal cuisine to the public in the style of a Western course meal.

Since it was a course meal that started out in high-class restaurants, there were many restaurants with quiet and formal interiors, so Hanjeongsik restaurants were often used for upper-class gatherings or special gatherings.

Recently, Hanjeongsik restaurants have been divided into high-end restaurants and restaurants where you can enjoy hanjeongsik at a relatively low price.

What dishes are served at Hanjeongsik?

Your First Encounter with Hanjeongsik

Stepping into the world of Hanjeongsik can be a delightful surprise for first-timers. With an array of dishes presented on a single table, this style of Korean dining offers a miniature version of the country’s impressive culinary landscape. The charm of Hanjeongsik lies in the variety of dishes and the depth of flavors— a nod to Korea’s rich food heritage.

Tasting the Rainbow: Banchan

Any Hanjeongsik experience begins with banchan, an assortment of small side dishes. Banchan is characteristically colorful and full of robust flavors. A Hanjeongsik spread typically features staples like kimchi, a spicy fermented cabbage dish, and japchae, stir-fried glass noodles often garnished with an assortment of vegetables. Let’s not forget the crispy mung bean pancakes, another example of the many delightful dishes that form the cast of this culinary ensemble.

Comforting Bowls of Soup and Stew

Soup, particularly guk is integral to Hanjeongsik. Guk is a clear, savory broth cooked slowly with vegetables, tofu, and occasionally meat. However, if you’re a seafood lover, the spicy maeuntang stew, brimming with tender seafood, is sure to be a standout. These soups and stews provide a comforting counterpoint to the bold flavors of the other dishes on the table, creating a well-rounded meal.

Main Dish Heroes

When it comes to the main dishes in Hanjeongsik, there’s much to admire. Expect servings of succulent, marinated bulgogi (grilled beef) or the mouthwatering tenderness of galbijjim (braised short ribs). Seafood enthusiasts may also find a whole grilled fish, which delivers clean, fresh flavors.

Dessert Time

In Hanjeongsik, desserts are anything but an afterthought. Often featured are traditional Korean sweets like various shapes and colors of tteok (rice cakes), along with the subtly sweet tastes of persimmon punch or shikhye (sweet rice punch).

The Hanjeongsik Symphony

Each dish served in a Hanjeongsik meal complements the next, creating a wonderfully balanced and harmonious dining experience. It’s a tantalizing blend of tastes that perfectly capture the essence of Korean culinary expertise and is undoubtedly worth trying on your next visit to Korea.

I highly recommend Hanjeongsik.

If you haven’t had much exposure to Korean food or are planning a trip to Korea, I recommend trying hanjeongsik for three reasons. First, you’ll find something to your liking. Hanjeongsik comes with a variety of side dishes, and it also has a few main dishes. You’re bound to find your favorite Korean food amongst this variety. In fact, if you’ve never had Korean food before, I’d recommend Hanjeongsik especially.

The second reason is to see how spicy you can handle. There’s a lot of variety in the food served at Hanjeongsik, so there’s a lot of variety in the spiciness of the food. You won’t find anything super spicy, but if you can’t eat spicy food at all, you can see how far you can go.

Finally, there are foods that can only be found at Hanjeongsik restaurants. Since the menus are based on traditional Korean dishes, you’ll often find dishes that are not available in regular restaurants. This experience is not easy to come by and will be one of the best things you can do when visiting Korea.

Hanjeongsik and Baekban: Unveiling the Differences

These two forms of Korean dining have unique attributes, reflecting the dynamic nuances of Korea’s vibrant food landscape, with each offering a different side to gastronomic grandeurs.

Scale and Scope

First off, the most glaring difference between the two is the sheer scale and scope. Hanjeongsik is a mind-boggling spread of various dishes, akin to a lavish banquet. It is a full-course meal consisting of assorted appetizers, main dishes, communal dishes, and desserts, all bursting with unique flavors and textures. By contrast, Baekban is a simpler everyday meal, typically including rice, soup, and a few side dishes, making it a humbler but equally flavorful counterpart. Rice, the staple food in Korean cuisine, is also served in Hanjeongsik, often as plain white rice or bibimbap (mixed rice with vegetables and meat).

Cultural Connection

In Hanjeongsik, you are offered a journey through Korea’s culinary culture, its vast variety reflecting Korea’s rich regional diversity. The flavor profiles of the dishes are complex and varied, offering a glimpse into the very soul of Korean cuisine. On the flip side, Baekban, deeply rooted in family traditions and everyday life, is comfort food at its best – homey and satisfying, reminding locals of the familiar tastes of childhood.

Cooking Techniques and Ingredients

Last but not least, the cooking techniques and ingredients also play a significant role in differentiating the two. Hanjeongsik often features special seasonal ingredients, unique recipes and exquisite cooking methods, demanding a high level of culinary mastery. Whereas, Baekban rests upon the beauty of simplicity and daily sustenance, often showcasing home-cooked dishes made with fresh local produce.

In a nutshell, the choice between Hanjeongsik and Baekban is really about what kind of dining experience you are seeking. Either way, both promise a memorable introduction to the impressive realm of Korean cuisine.
